Sometimes you don't want a recipe, you just want the standards; the rough quanity that's been relied on for generations. These are the basic quantity ratios for a few common foods. They are all subjective, right, and wrong, but they are all a starting point when you're scratching your head, trying to remember what that chef or book said. You're welcome.

Fresh Pasta

Per Person:

  • 1 egg for every 100g of '00' flour

Vinaigrette

  • 1 part vinegar to 3 parts oil

Burger Patty

BBQ patty per person:

  • 1/3 pound of ground beef (or 150g)

Smash burger patty per person:

  • 1/6 pound x 2 of ground beef (or 75g x 2). This makes two thinner patties that are smashed on the grill.

Basmati Rice

This will certainly cause arguments and many just prefer a rice cooker. But for those who like to do it the old fashioned way, this is a good starting point when cooking with the absorption method with the lid on.

  • Fill pot with quantity of rice required, then, touching the top layer of rice with your index finger (or imagining this, when using hot water) fill with water up to the first joint of that finger.

Gnocchi

Per 6 people:

  • 1 egg for every 1kg of (floury) potatoes and 300g of flour.

Roti

Per roti:

  • 40g of atta flour
